Interesting combination of mexican tortillas and sour cream, spices and grilled eggplant. Quickly prepared and so nice

INGREDIENTS

  • 4 tablespoons olive oil

  • 1 medium eggplant, thinly sliced

  • Mint, small handful, chopped

  • Parsley, small hendful, chopped

  • Chives, chopped, 2 tablespoons

  • 7 fl oz greek yogurt

  • 2 tablespoons mayonnaise

  • 2 large tortillas

  • 1 thiny sliced cucumber

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground white pepper

  • Smoked paprika to garnish

DIRECTIONS

Heat the oil and fry eggplant until golden, for about 3 min. on each side. Drain and let cool.

Mix the herbs with yogurt, mayo, salt and pepper.

Arrange fried eggplant slices over tortillas and spread with yogurt mixture. Put the cucumber slices on top and roll up tortillas. Before serving sprinkle with paprika.
